Our Story
Established in 1978, The Burrito Co is a downtown family owned institution. A restaurant that has touched generations of locals and has survived the changing landscape of downtown clientele and merchants for over 45 years. Originally opened to accommodate downtown workers, churchgoers, neighborhood families, nearby students, evening cruise lines, plaza kids, and all other citizens of Santa Fe. A trusted and reliable New Mexican meal that locals could afford.
Many recall the days of chef/owner Arquimides ”Kimo” Castro as a permanent restaurant fixture through the late 90s/ 2000s. Chef Kimo cooked in the kitchen for many years exuding great passion and pride for his culinary dishes, his workers, and customers. Mentoring staff who remain today. And introducing Central American flavors, artwork and music to infuse the more traditional NM theme. His dedicated presence and love for his restaurant left a lasting impact.
Today, the Burrito Co. is operated by the 2nd generation of Castros, as Kimo passed away in 2014. His surviving family, all raised working in the family business, strive to maintain the restaurant's local familiarity and authentic recipes that have been passed down for decades. One of the few lasting stopping grounds for Santafeans to get their quick bite and reminisce about the good ol' days on the very patio of their childhood. A place to rub shoulders with Santa Fe's most diverse clientele of tourists and locals alike.
